  • 8 oz macaroni Choose whole grain or gluten-free pasta if preferred.
  • 2 cups shredded cheese Mix of sharp cheddar and mozzarella recommended.
  • 1/2 cup milk Whole milk yields the best flavor; alternatives can be used.
  • 2 tbsp butter Use good-quality unsalted butter.
  • salt and pepper To taste.

Preparation

  • In a large pot of boiling, salted water, cook the macaroni according to package instructions, around 7-8 minutes or until al dente. Drain and set aside, saving a bit of pasta water.
  • In a medium saucepan, melt the butter over medium heat. Stir occasionally until fully melted and bubbly.
  • Add the drained macaroni to the saucepan, stirring to coat the pasta evenly with the melted butter.
  • Pour in the milk, stirring until fully combined and heated through, about 1-2 minutes.
  • Gradually add the shredded cheese, stirring continuously to ensure a smooth melting process, about 3-5 minutes until the sauce becomes thick and creamy.
  • Season with salt and pepper to taste.
  • Serve warm in bowls and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. For a thicker sauce, add reserved pasta water; for a thinner sauce, cook gently until thickened.
