Preparation

  • Let your chicken come to room temperature (about 30 minutes) before cooking.
  • Mince your garlic right before adding it for the freshest flavor.

Cooking

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering.
  • Generously season both sides of the chicken breasts with salt and pepper.
  • Add the seasoned chicken to the skillet and cook for 7-8 minutes on each side until golden brown (internal temperature of 165°F).
  • Once fully cooked, add the minced garlic and stir for 30 seconds until fragrant.
  • Pour in the freshly squeezed lemon juice, stir to combine, and cook for an additional 2 minutes.
  • Remove from heat, garnish with fresh parsley, and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can marinate the chicken in lemon juice, garlic, and olive oil a few hours before cooking for extra flavor. Use a meat thermometer for accuracy to avoid overcooking.
