Ingredients
  

  • 1 large flour tortilla
  • 2 tbsp tomato sauce or salsa (optional)
  • 1 egg
  • ½ cup shredded mozzarella cheese
  • 2 slices cooked bacon, crumbled (or vegetarian sausage)
  • ¼ cup chopped vegetables (e.g., bell peppers, spinach, or onions)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C). Place a baking sheet inside to heat.
  • Prepare the Tortilla Base:
    Brush one side of the tortilla with olive oil. Place the oiled side down on a sheet of parchment paper.
  • Add the Sauce:
    Spread a thin layer of tomato sauce or salsa on the tortilla. Skip this step if you prefer a cheesier base.
  • Layer the Toppings:
    Sprinkle half the cheese over the sauce. Crack an egg in the center of the tortilla, and arrange bacon and vegetables around it. Top with the remaining cheese.
  • Bake:
    Carefully transfer the parchment paper and tortilla onto the preheated baking sheet. Bake for 10-12 minutes, or until the egg white is set and the tortilla edges are golden.
  • Serve:
    Remove from the oven, sprinkle with fresh herbs, and season with salt and pepper. Slice and enjoy immediately!

Notes

  • For a runny yolk, bake for a shorter time. Adjust as needed for a firmer egg.
  • Use parchment paper to avoid sticking and for easy cleanup.
