  • 10.5 ounces uncooked penne pasta or your preferred pasta shape
  • 2 cups diced chicken breast use high-quality, organic chicken for the best flavor
  • 2 cups marinara sauce homemade or your favorite store-bought kind works wonderfully
  • 1 cup cherry tomatoes, halved fresh is the way to go; they burst with sweetness!
  • 1 cup fresh mozzarella balls look for the small ciliegine variety or get a ball and tear into chunks

Garnish

  • Fresh basil leaves add these right before serving for a fragrant touch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large baking dish, evenly combine the uncooked penne pasta, diced chicken breast, and marinara sauce. Mix well.
  • Scatter the halved cherry tomatoes generously over the top of the dish.
  • Cover the dish tightly with aluminum foil and bake for 25 minutes.
  • Remove the foil and top the dish with fresh mozzarella balls. Bake uncovered for an additional 5 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with fresh basil leaves before serving.
