  • 1/2 cup coconut oil Ensure the oil is melted for easy mixing; unsalted butter can be used as a substitute.
  • 1/4 cup maple syrup or honey Maple syrup is recommended for a vegan option.
  • 1/2 cup yogurt-covered raisins These add the perfect finishing touch; chocolate candies can be used as a substitute.

Preparation

  • In a large mixing bowl, add the shredded coconut and cocoa powder. Stir well until they’re fully blended.
  • Microwave the coconut oil for 20-30 seconds until completely melted.
  • Pour the melted coconut oil and maple syrup or honey into the bowl, mixing thoroughly until you have a sticky mixture.
  • Scoop about 3 tablespoons of the mixture into a muffin tin, pressing firmly to hold its shape.
  • Create a small well in the center of each mound using a butter knife.
  • Place the muffin tin in the freezer for at least 30 minutes.
  • Gently remove the cookies from the muffin tin and place 5-6 yogurt-covered raisins in each well.

Serving

  • Enjoy immediately or store in an airtight container in the refrigerator for up to 5 days.
