Ingredients
  

For the Date Filling

  • 2.5 cups dried, pitted, chopped Medjool dates Be sure to use Medjool dates for their rich sweetness. You can soak them in hot water for 10 minutes if they're a bit tough!
  • 0.25 cups brown sugar (or coconut sugar) Either option will add the perfect level of sweetness. Coconut sugar offers a lower glycemic index.
  • 1 cup water This will help create the sticky filling when combined with the dates.
  • 0.5 cups freshly squeezed lemon juice The acidity balances the sweetness beautifully!

For the Crust

  • 1.5 cups rolled oats Use old-fashioned oats for that delightful chewiness!
  • 1 cup all-purpose flour Feel free to use whole wheat flour if you're looking for a nuttier flavor.
  • 1 cup brown sugar (or coconut sugar) Yes, again! This is for the crust.
  • 0.5 teaspoons baking powder This will give a slight lift to the crust.
  • pinch salt Essential for enhancing the flavors!
  • 0.75 cups cold, salted butter, diced Ensure it’s cold for a crumbly texture in your crust; use a quality brand for maximum flavor.

Preparation

  • Preheat the oven to 175°C (350°F) and line a 20x20 cm baking dish with parchment paper.

Create the Date Filling

  • Chop the dates into smaller pieces, ensuring to remove any pits.
  • In a saucepan, combine the dates, water, and 1/4 cup brown sugar and bring to a boil.
  • Reduce the heat and stir constantly until the mixture reaches a thick, jam-like consistency (about 8-10 minutes).
  • Stir in the freshly squeezed lemon juice.
  • Monitor the consistency to ensure it's thick enough to spread.

Make the Crust

  • In a large bowl, mix the rolled oats, flour, 1 cup brown sugar, baking powder, and salt.
  • Add the cold butter pieces and mix until a crumbly texture is achieved.

Assemble the Bars

  • Press 50 to 60 percent of the oat mixture evenly into the baking dish as the crust.
  • Spoon the date mixture on top and spread it evenly.
  • Sprinkle the remaining oat mixture evenly over the top and press lightly.

Bake

  • Bake the Date Triangles for 45 to 50 minutes or until golden brown.
  • Look for a bubbly and fragrant finish as an indication they’re almost done!

Cool and Slice

  • Let them cool completely before slicing to keep the bars intact.

Notes

Store these in an airtight container at room temperature for up to a week or refrigerate for up to 2 weeks. They also freeze well, lasting for up to 3 months. You can prepare the date filling a day in advance, keeping it in the fridge and bringing it to room temperature before assembling.
