Preparation

  • Preheat your oven to 450°F (232°C).
  • Use a sharp knife to score the skin of the pork shoulder in a crisscross pattern, making sure not to cut into the meat.
  • Rub every inch of the pork with olive oil, followed by a hearty sprinkle of salt and pepper.
  • If using garlic and herbs, rub them into the meat now.

Cooking

  • Transfer the pork onto a roasting rack set inside a roasting pan.
  • Roast for 30 minutes, allowing the skin to bubble and crisp.
  • After the first 30 minutes, reduce the oven temperature to 300°F (149°C) and roast for another 3-4 hours, or until the meat is fork-tender and the skin is crispy.
  • Allow the pork to rest for 15-20 minutes before carving.

Notes

Store leftover crispy pork in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 3 months. Consider adding a glaze during the final roasting phase for additional flavor.
