  • 1/2 lb cooked shrimp, finely chopped High-quality seafood recommended.
  • 1/2 lb cooked crab meat, shredded Fresh crab preferred.
  • 1 cup shredded Monterey Jack cheese Or a blend of cheeses for more flavor.
  • 1/2 cup cream cheese, softened Bring to room temperature for easier mixing.
  • 1/2 cup queso dip Choose mild or spicy based on preference.
  • 1 tbsp fresh cilantro, chopped Plus more for garnish.
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

Tortilla and Cooking

  • 8 small flour tortillas Soft and pliable for easy rolling.
  • 2 tbsp butter or oil For frying.

Instructions
 

Preparation

  • In a large bowl, combine the cooked shrimp, crab meat, Monterey Jack cheese, cream cheese, queso, cilantro, garlic powder, and smoked paprika. Mix until creamy.

Assembly

  • Scoop 2-3 tablespoons of the filling into a tortilla, roll it tightly, and secure it with a toothpick. Repeat for all tortillas.

Cooking

  • In a skillet over medium heat, melt butter or oil. Fry the rolled quesos for about 2-3 minutes per side until golden brown.

Serving

  • Remove toothpicks, drizzle with warm queso dip, sprinkle with fresh cilantro, and serve immediately.

Notes

Store leftover quesos in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer to maintain crunch.
