Main Ingredients

  • 1 cup all-purpose flour, plus more for dusting King Arthur Flour for consistent results
  • 2 teaspoons baking powder Make sure it's fresh for the best rise
  • 1 teaspoon salt Adjust to taste; you can even use garlic salt for added flavor
  • 1 cup cottage cheese, blended until smooth Daisy brand is recommended for creaminess
  • 1/2 whole egg, beaten Reserve the other half for egg wash

Instructions
 

Mixing

  • In a mixing bowl, add the flour, baking powder, and salt. Whisk together until well combined.
  • Using a blender or food processor, blend the cottage cheese until it's completely smooth.
  • Add the blended cottage cheese to the dry ingredients. Mix until a soft, smooth dough forms. If the dough is sticky, sprinkle in a little extra flour as needed.

Shaping

  • Divide the dough into 4 equal pieces. Roll each piece into a tight ball and poke a hole in the center to form a bagel shape. Gently stretch the dough to create a larger hole.

Baking

  • Brush the tops of the bagels with the beaten egg and sprinkle your desired toppings.
  • For air frying, preheat to 300°F (150°C) and air fry for about 13 minutes or until golden brown.
  • For baking, preheat to 375°F (190°C) and bake for 25 minutes or until they are golden and firm.

Serving

  • Let cool slightly, then enjoy. Slather with cream cheese, your favorite spreads, or top with smoked salmon and capers.

Notes

Ensure your cottage cheese is at room temperature for smooth blending. Store leftovers in an airtight container for up to 3 days or freeze for later.
