Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • In a bowl, whisk together the flour, baking soda, baking powder, salt, and ground cardamom. Set aside.
  • In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  • Beat in the egg and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
  • Incorporate the espresso powder into the dough.

Baking

  • Roll the dough into small balls (about 1 inch in diameter) and roll them in sugar for a sweet finish.
  • Place on a baking sheet lined with parchment paper, spacing them 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
