Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine coconut milk, sugar, coconut flakes, and vanilla extract. Whisk until smooth.
  • Pour the coconut mixture into the pre-made pie crust and spread evenly.

Baking

  • Bake for 25-30 minutes or until set, the top should be lightly golden, and the filling should jiggle slightly.
  • Allow to cool completely, then refrigerate for at least 2 hours.

Serving

  • Top with dollops of vanilla whipped cream and sprinkle additional coconut flakes before serving.

Notes

Keep bars in an airtight container in the refrigerator for up to 7 days. They can be frozen individually for up to 3 months. Make-ahead option: prepare filling a day in advance.
