  • 1 medium apple Cored and chopped. A sweet, crisp apple like Honeycrisp or Fuji works well.
  • 1 cup grapes Halved. Seedless varieties are best for a smooth texture.
  • ½ cup celery Thinly sliced. Adds wonderful crunch.
  • ½ cup mayonnaise Use high-quality mayonnaise for creaminess.
  • 1 tablespoon lemon juice Freshly squeezed is best for bright flavor.
  • Salt and pepper To taste.
  • Lettuce leaves For serving. Romaine or butter lettuce works well.

Preparation

  • In a large mixing bowl, combine the diced chicken, apple, grapes, celery, and walnuts.
  • In a separate small bowl, whisk together the mayonnaise and lemon juice, and season with salt and pepper.
  • Drizzle the dressing over the chicken mixture and fold gently to coat.
  • Transfer the salad to a covered container and chill in the refrigerator for 60-90 minutes.
  • When ready to serve, place lettuce on plates and spoon the chilled salad over the greens.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This salad gets better as it sits, making it perfect for meal prep.
