For the Filling

  • 8 ounces cream cheese, softened Bring to room temperature for easy mixing.
  • 1 cup powdered sugar Sifted for lump-free texture.
  • 1 teaspoon pure vanilla extract Always opt for high-quality vanilla.
  • 8 ounces Cool Whip You can use homemade whipped cream for extra richness.
  • 21 ounces can cherry pie filling Choose a brand made with real fruit for better flavor.

Instructions
 

Preparing the Crust

  • In a mixing bowl, combine graham cracker crumbs and granulated sugar.
  • Pour in melted butter and mix until all crumbs are coated and resemble wet sand.
  • Press the mixture firmly into the bottom of a greased 9x13 inch baking dish.
  • Use a measuring cup to press down evenly for a smooth crust.

Creating the Filling

  • In a large bowl, beat softened cream cheese with a hand mixer until creamy.
  • Add powdered sugar and vanilla extract. Beat until smooth and fluffy.
  • Fold in Cool Whip gently with a spatula until fully incorporated.

Assembling the Dessert

  • Spread the cream cheese mixture evenly over the crust.
  • Carefully spoon cherry pie filling over the top, gently spreading it to cover the filling.
  • Refrigerate for at least 4 hours, or overnight for best results.

Notes

Storage: Cover with plastic wrap and store in the refrigerator for up to 5 days; don’t freeze as the texture won’t hold up. You can prepare this dessert 1-2 days in advance.
