Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easy removal later.
  • Melt the butter in a large bowl—either on the stovetop or in the microwave until just melted. Don’t let it boil.
  • Stir in the brown sugar using a wooden spoon until the mixture is well combined and looks glossy.
  • Add the eggs and vanilla extract, mixing until smooth.
  • In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  • Spread the batter evenly in the prepared baking dish.
  • Sprinkle the granulated sugar evenly over the top of the batter.

Baking

  • Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean but moist.
  • Allow to cool in the baking dish on a wire rack before cutting into squares.

Notes

These blondies stay soft and fresh in an airtight container for up to three days. You can also prepare the batter a day in advance and bake the next day for freshness.
