For the Filling

  • ½ cup brown sugar, packed Choose light or dark brown for varying flavor depth.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, ground cinnamon, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy—about 2-3 minutes.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  • In a small bowl, combine brown sugar and ground cinnamon for the filling.
  • Roll half of the cookie dough out on parchment paper into a rectangle about ¼ inch thick.
  • Sprinkle half of the cinnamon-sugar filling over the dough, leaving a small border around the edges.
  • Roll the dough away from you, forming a log, using the parchment to help.
  • Slice the log into 1-inch thick rounds and place them on a baking sheet lined with parchment paper.
  • Bake in preheated oven for 10-12 minutes, or until golden brown.

Notes

Store cookies in an airtight container at room temperature for up to a week. Refrigerate the dough for easier handling if too sticky.
