For the cookie dough

  • 1 cup cream cheese, softened Choose a high-quality cream cheese for the best flavor.
  • 1/2 cup unsalted butter, softened Make sure you let the butter come to room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour For best results, use a good quality all-purpose flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon

For rolling

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon This adds a delightful crunch and flavor to the outside.

Baking

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the cream cheese and butter until creamy and smooth, about 2-3 minutes.
  • Add the granulated sugar and brown sugar, mixing until well combined, approximately 1-2 minutes.
  • Beat in the eggs and vanilla extract until smooth.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, combining until just mixed.
  • In a small bowl, combine 1/2 cup granulated sugar with 1 tablespoon cinnamon for rolling.
  • Scoop tablespoon-sized balls of dough and roll them in the cinnamon-sugar mixture.
  • Place the rolled balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Baking times can vary by oven, so watch for the golden edges. Let the cookies cool completely for the best texture. If dough is too sticky, chill it in the fridge for about 30 minutes.
