Ingredients
  

For the Cookie Base

  • 1 cup all-purpose flour Use high-quality flour for the best texture.

  • 1/2 cup brown sugar Light brown sugar adds moisture and flavor depth.
  • 1 large egg Will help bind everything together.
  • 1 teaspoon vanilla extract Use pure vanilla extract for the best flavor.
  • 1 cup chocolate chips Semi-sweet or dark chocolate works best for that delightful balance.

For the Cheesecake Layer

  • 8 oz cream cheese, softened Make sure it’s at room temperature for a smooth mixture.
  • 1/2 cup powdered sugar Sweetens the cream cheese layer perfectly.
  • 1/2 teaspoon vanilla extract Reinforces the beautiful vanilla flavor in the cheesecake layer.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  • In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
  • In a separate bowl, cream the softened butter, granulated sugar, and brown sugar together for about 2-3 minutes until light and fluffy.
  • Beat in the egg and 1 teaspoon of vanilla extract into the sugar mixture.
  • Gradually incorporate the flour mixture into the butter-sugar mix and fold in the chocolate chips gently.
  • Press two-thirds of the cookie dough into the bottom of the greased baking dish.

Cream Cheese Layer

  • In another bowl, beat the softened cream cheese until smooth (about 2 minutes).
  • Add powdered sugar and the remaining 1/2 teaspoon of vanilla extract, and mix until creamy.
  • Spread the cream cheese mixture over the layer of cookie dough in the baking dish.
  • Crumble the remaining cookie dough and sprinkle it on top.

Baking

  • Bake in the preheated oven for 25-30 minutes until the cheesecake layer is slightly set in the middle but still soft.
  • Allow to cool in the pan for about 15-20 minutes before slicing into bars.
  • Serve warm or chill them in the refrigerator for a firmer texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Drizzle with caramel or chocolate sauce for an extra treat.
