  • 1 can 15 oz chickpeas (garbanzo beans), rinsed and drained Can substitute with 1 1/2 cups cooked chickpeas.
  • 1 tablespoon sesame or olive oil Use high-quality extra virgin olive oil for best flavor.
  • 1 teaspoon chipotle powder Try using smoked chipotle powder for added depth.
  • 1/2 teaspoon garlic powder Fresh minced garlic can be used for a stronger punch.
  • Mineral salt to taste Sea salt or Himalayan salt works well.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Drain and rinse the chickpeas, then pat them dry with a dish towel or paper towel. Remove any loose skins.
  • Line a rimmed baking sheet with parchment paper or a Silpat.

Seasoning and Baking

  • Place the dried chickpeas on the lined baking sheet. Drizzle with oil and sprinkle with chipotle powder, garlic powder, and salt. Mix well to coat the chickpeas evenly.
  • Spread the chickpeas into a single layer, ensuring there is space between each.
  • Roast in the preheated oven for about 40-50 minutes, stirring every 15 minutes, until they are golden brown and crunchy.
  • Let the chickpeas cool for 10 minutes before serving.

Notes

Store in a container that allows airflow to maintain their crunch. For a sweeter flavor, replace oil with pure maple syrup.
