  • 1 can chickpeas, rinsed and drained Look for BPA-free cans for the best quality.
  • 1/4 cup peanut butter or almond butter Natural peanut butter with no added sugars is recommended.
  • 1/4 cup maple syrup or honey Pure maple syrup enhances the flavor.
  • 1 tsp vanilla extract Use pure vanilla extract for the richest flavor.
  • 1/4 tsp salt Enhances sweetness and flavor.
  • 1/2 cup chocolate chips Semi-sweet or dark chocolate chips are recommended.

Preparation

  • In a food processor, combine the rinsed chickpeas, peanut or almond butter, maple syrup, vanilla extract, and salt.
  • Blend on high until the mixture is completely smooth, scraping down the sides if necessary (about 1-2 minutes).
  • Remove the food processor lid and fold in the chocolate chips gently with a spatula.
  • With clean hands, roll the dough into small balls (about 1 inch each).
  • Place them on a baking sheet covered with parchment paper, then refrigerate for 30 minutes.
  • Grab a few and savor them cold or let them sit at room temperature for a softer texture.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to a month. You can experiment with different nut butters and add spices for extra flavor.
