  • 4 links Chicken Sausages Use Applegate Organic Chicken Sausage or any smoked chicken sausage at room temperature.
  • 2 cups Bell Peppers A mix of red, green, and yellow for sweetness and color.
  • 1 medium Onion Sweet or red onions, sliced into wedges or rings.
  • 2 medium Zucchini Smaller zucchini for best texture.

Seasoning & Oil

  • 2 tablespoons Olive Oil Extra virgin for enhancing flavors.
  • 1 teaspoon Garlic Powder Substitute with 2-3 cloves of minced fresh garlic.
  • to taste Salt Essential for flavoring.
  • to taste Pepper Essential for flavoring.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the chicken sausages into 1-inch pieces and chop the vegetables into bite-sized pieces.
  • In a large bowl, toss the chicken sausages and vegetables with olive oil, garlic powder, salt, and pepper until well-coated.

Cooking

  • Spread the mixture evenly on a sheet pan, ideally lined with parchment paper.
  • Bake in the preheated oven for about 25-30 minutes, stirring halfway through for even browning.
  • Serve warm and enjoy garnished with fresh herbs if desired.

Notes

For an extra kick, add a dash of balsamic glaze before serving. Store leftovers in an airtight container in the fridge for up to 3 days.
