  • 1 cup orzo pasta Tiny pasta that cooks quickly and absorbs flavors beautifully.
  • 2 cups broccoli florets Fresh is best, but frozen can be used; just make sure to thaw.
  • 2 tablespoons olive oil Use extra virgin for the best flavor.
  • 1 whole onion, chopped Sweet onions add a touch of sweetness.
  • 2 cloves garlic, minced Fresh minced garlic adds an aromatic punch.
  • 4 cups chicken broth Homemade is best, but low-sodium store-bought works!
  • Salt and pepper To taste.
  • Parmesan cheese for serving (optional) Grate fresh for a lovely finishing touch.

Instructions

Cooking Steps

  • In a large skillet, heat the olive oil over medium heat until it shimmers.
  • Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  • Slice the chicken sausage into bite-sized pieces and add to the skillet, cooking until browned, about 5-6 minutes.
  • Stir in the orzo and cook for an additional 2 minutes to allow it to absorb flavors.
  • Pour in the chicken broth and bring to a boil.
  • Once boiling, reduce heat to low, add the broccoli florets, and cover. Simmer for about 10 minutes until the orzo is tender.
  • Season with salt and pepper to taste, ensuring to stir well.
  • Serve immediately, topped with freshly grated Parmesan cheese if desired.

Notes

For best results, ensure chicken broth is at room temperature. Store leftovers in an airtight container in the fridge for up to 3 days.
