Ingredients

For the Chicken Mushroom Skillet

  • 1 lb chicken breasts, cut into strips Using organic chicken for the best flavor
  • 8 oz mushrooms, sliced Cremini or button mushrooms work beautifully
  • 2 tablespoons olive oil Extra virgin olive oil brings out the flavor
  • 1 medium onion, chopped Yellow or sweet onions for a touch of sweetness
  • 2 cloves garlic, minced Fresh garlic is key for that aromatic kick
  • 1 cup chicken broth Homemade or low-sodium for healthier options
  • 1 teaspoon thyme Dried or fresh; the essence of thyme is irreplaceable
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish Adds a pop of color and freshness

Instructions

Preparation

  • In a large skillet, heat the olive oil over medium heat until it shimmers slightly.
  • Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until softened and fragrant.
  • Toss in the chicken strips. Cook for about 5-7 minutes, stirring occasionally, until они are browned on the outside.
  • Stir in the sliced mushrooms and sauté until tender, about 3-4 minutes.
  • Carefully pour in the chicken broth and add the thyme. Let the flavors meld together.
  • Season with salt and pepper to taste and allow to simmer for about 10 minutes until the chicken is cooked through and the sauce slightly thickens.
  • Serve immediately, garnished with freshly chopped parsley.
