Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, minced onion, minced garlic, chopped parsley, salt, and black pepper. Mix until well incorporated, but do not overmix.
- Scoop out a small amount of the mixture and roll it into a compact meatball, about 1-inch in diameter. Place it on the prepared baking sheet. Repeat until all mixture is used, yielding about 20-24 meatballs.
Cooking
- Bake the meatballs in the preheated oven for 18-22 minutes, or until cooked through and browned on the outside.
- Remove from the oven and let cool for a few minutes before serving.
Notes
These meatballs can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. You can freeze uncooked meatballs and bake them directly from the freezer, just adding extra cooking time.
