Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken breasts Use organic or free-range for optimal flavor.
  • to taste Salt and pepper Freshly ground is preferred.
  • 1/2 cup all-purpose flour For dredging the chicken.
  • 2 tablespoons olive oil Extra-virgin olive oil is recommended.
  • 2 tablespoons butter Unsalted butter at room temperature.

For the Sauce

  • 8 ounces mushrooms, sliced White button or cremini mushrooms work well.
  • 3/4 cup Marsala wine Choose fine or superior quality.
  • 1 cup chicken broth Homemade is ideal, but reputable store-bought works too.

For Serving

  • 1 cup cooked bowtie pasta Can substitute with spaghetti or rice.
  • Fresh parsley For garnish.

Preparation

  • Season the chicken breasts generously with salt and pepper, then dredge them in flour, shaking off the excess.
  • Ensure that butter is at room temperature for easy incorporation.
  • Prepare all ingredients before starting to create a smooth workflow.

Cooking

  • Heat olive oil and butter in a large skillet over medium heat until melted and bubbly.
  • Add the chicken to the skillet and cook each piece for about 4-5 minutes per side until golden brown, then set aside.
  • In the same skillet, add sliced mushrooms and sauté for about 5 minutes until tender and golden.
  • Pour in Marsala wine and chicken broth, scraping up the flavorful bits from the bottom of the pan, and bring to a simmer.
  • Return the chicken to the skillet, ensuring they’re submerged in the sauce, cover, and cook for an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F.
  • Serve the Chicken Marsala over cooked bowtie pasta and garnish with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Pounding the chicken to even thickness ensures uniform cooking. This dish can also be prepped ahead by making the chicken and sauce a day in advance.
