  • 1 teaspoon vanilla extract Nothing beats pure vanilla extract for flavor!
  • ½ cup vanilla protein powder Choose a protein powder you enjoy.
  • ½ teaspoon baking soda Helps the cookies rise and remain chewy.
  • ½ cup chocolate chips Dark chocolate chips work wonderfully.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk the eggs and sugar until smooth and slightly fluffy.
  • Add the peanut butter and vanilla extract, stirring until well combined.
  • Gently fold in the vanilla protein powder and baking soda.
  • Stir in the chocolate chips.
  • Scoop spoonfuls of dough onto the prepared baking sheet, spacing them apart. Flatten the tops gently.

Baking

  • Bake for 10-12 minutes, or until the edges are just set but the centers appear slightly soft.
  • Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

To avoid overbaking, remove cookies when edges are set. Store in an airtight container for optimal freshness. You can prepare the dough ahead of time and freeze it.
