Ingredients
  

For the crust

  • 1.5 cups crushed shortbread cookies I recommend Walker’s for their buttery flavor
  • 6 tablespoons unsalted butter, melted Room temperature is a must to help bind

For the cream cheese mixture

  • 2 blocks cream cheese, room temperature Don’t skip this; room temperature allows for smooth mixing.
  • 1 cup confectioners' sugar Feel free to use organic if you prefer!
  • 2 teaspoons vanilla extract I love using real vanilla extract for enhanced flavor.
  • 2 teaspoons freshly squeezed lemon juice Adds a zing that cuts through the sweetness
  • 3 cups whipped topping, divided Cool Whip works like a charm!
  • 1 box cherry jello mix For that signature cherry flavor—get creative with other flavors too!

For the topping

  • 2 cups cherry pie filling Use fresh if you can find it during cherry season!

Instructions
 

Preparation

  • Line an 8x8-inch baking dish with parchment paper, letting it extend up the sides for easy removal later.
  • In a medium bowl, combine the crushed shortbread cookies and melted butter until fully blended. Press the mixture firmly into the bottom of the lined baking dish to create a solid, even base.
  • Using a hand mixer, beat the cream cheese, confectioners' sugar, vanilla extract, and lemon juice in a large bowl on medium speed until it’s perfectly smooth, about 3 minutes.
  • Gently fold in 2 cups of whipped topping until well-combined for that fluffy texture we love.
  • Spread half of the cream cheese mixture generously over the crust, smoothing it out with a spatula.
  • In the remaining cream cheese mixture, add 1/4 cup of the cherry jello mix and blend until incorporated. Spread this colorful layer over the first cream cheese layer.
  • Finish with the remaining whipped topping, spreading it evenly. Finish your masterpiece by spooning the cherry pie filling over the top.
  • Refrigerate for at least 1 hour, or overnight if you have patience! The longer it chills, the more the flavors meld.

Notes

For the perfect slice, use a hot, wet knife to cut through the layers. This dessert can stay fresh in the fridge for up to 3-4 days. If you wish to store it longer, consider freezing for a delightful frosty treat.
