  • 4 pieces Whole Wheat Tortillas Look for brands without preservatives for the best quality.
  • 2 cups Fresh Spinach Can be substituted with kale or Swiss chard.
  • 1 cup Bell Peppers Choose vibrant colors for sweetness and crunch.
  • 2 cups Cheese Blend (Mozzarella and Cheddar) You can also use vegan cheese substitutes.
  • 1/2 cup Salsa Store-bought or homemade.
  • 1/2 cup Guacamole Optional.

  • Preheat a skillet over medium heat. Add a few drops of water; if they dance on the surface, your skillet is ready.
  • Place one whole wheat tortilla in the skillet. Allow it to warm up for about 30 seconds.
  • Sprinkle a generous layer of your cheese blend on one half of the tortilla.
  • Add a handful of fresh spinach and diced bell peppers on top of the cheese.
  • Gently fold the tortilla over, enclosing the fillings. Cook for about 2-3 minutes or until the bottom is golden brown and the cheese has melted.
  • Using a spatula, flip the quesadilla and cook the other side until golden—about 2 minutes more.
  • Remove from the skillet, let cool, and cut into wedges. Serve with salsa and guacamole.

Notes

For extra crispiness, brush the outside of the tortillas with oil before cooking. Avoid over-stuffing to keep them easy to flip. Store leftovers in an airtight container in the fridge for up to 3 days.
