  • 1 lb ground beef Look for lean meat (80/20 is perfect).
  • 8 oz cream cheese, softened Bring to room temperature for easy mixing.
  • 2 cups shredded cheddar cheese Use good quality sharp cheddar for the best flavor.
  • 1 packet taco seasoning Store-bought or homemade blend using chili powder, cumin, garlic powder, and onion powder.
  • 1 can diced tomatoes with green chilies Drain excess liquid for a thicker dip.
  • 1 cup sour cream Opt for full-fat for creamier consistency.
  • as needed tortilla chips or veggies for serving Serve with chips or fresh veggies.

Preparation

  • Heat a skillet over medium heat and add the ground beef. Cook for about 6-8 minutes, breaking it apart until browned. Drain any excess fat.
  • Mix in the taco seasoning and diced tomatoes (drained). Stir and let simmer for another 2-3 minutes.
  • In a separate bowl, combine softened cream cheese and sour cream. Blend until smooth, then fold in shredded cheddar.
  • Stir the seasoned beef mixture into the cheese mixture until well incorporated.
  • Transfer the mixture into a greased baking dish. Bake in a preheated oven at 350°F (175°C) for about 20 minutes, until bubbly.
  • Serve warm with tortilla chips or veggies.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Can be assembled a day in advance and baked just before serving.
