  • 1 cup Diced Tomatoes (canned) Choose those with green chilies for extra flavor.
  • 4 oz Cream Cheese (softened) Full-fat or low-fat options can be used.
  • 1 cup Shredded Cheddar Cheese Sharp cheddar is recommended for best flavor.
  • 1/2 cup Chicken Broth (low-sodium) Enhances flavor; low-sodium is healthier.

Preparation

  • Boil salted water and cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  • In a skillet over medium heat, add the ground beef or turkey. Brown until golden, about 5-7 minutes, and drain any excess fat.
  • Sprinkle in the taco seasoning and add the diced tomatoes. Simmer for about 5 minutes to let flavors mingle.
  • Lower the heat, add softened cream cheese and chicken broth, stirring until smooth, about 3-4 minutes.
  • Add the cooked pasta to the creamy mixture, stirring until fully combined.
  • Top with shredded cheddar cheese and cover with a lid for 5 minutes to melt.

Notes

For added flavor, sauté diced onions and garlic before adding meat. Store leftovers in an airtight container for up to 3 days.
