  • 1/2 onion chopped yellow or white onion works well
  • 2 cloves garlic, minced fresh garlic brings the best flavor
  • 2 cups beef broth homemade or low-sodium for a healthier option
  • 1 cup diced tomatoes canned or fresh, both will work
  • 1 tsp Italian seasoning for a lovely herbal note
  • Salt and pepper to taste don’t skip, as they enhance the dish
  • Chopped parsley for garnish adds a pop of color and freshness

Preparation

  • In a large skillet, heat over medium heat. Add the ground beef and cook until browned, typically 5-7 minutes. Drain excess fat to keep it lean.
  • Add in the chopped onion and minced garlic, cooking for an additional 2-3 minutes until the onion is translucent and fragrant.
  • Stir in the orzo, beef broth, diced tomatoes, Italian seasoning, along with salt and pepper. Give everything a good mix!
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes until the orzo is tender and has absorbed most of the broth.
  • Remove the skillet from heat. Stir in the shredded cheddar cheese until melted, creating that creamy, cheesy goodness.
  • Sprinkle with chopped parsley before serving. Enjoy this delightful dish hot from the pot!

Notes

To avoid burning the cheese, stir gently as you incorporate it, and taste to adjust seasoning before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can prep the ingredients the night before.
