  • 4 medium potatoes, sliced Starchy potatoes like Russets work best.
  • 1 onion, chopped onion Yellow onions provide sweetness; feel free to substitute with shallots.
  • 2 cups shredded cheese Cheddar is recommended; mix in mozzarella or pepper jack for extra flavor.
  • 1 can cream of mushroom soup Choose a low-sodium version if desired.
  • 1/2 cup milk Whole milk offers creaminess; alternatives like almond or oat milk can also be used.
  • to taste salt and pepper
  • Optional herbs (thyme or rosemary) Fresh herbs elevate the dish.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the chopped onion over medium heat until no longer pink, about 5-7 minutes. Drain excess fat.
  • In a large bowl, whisk together the cream of mushroom soup, milk, salt, and pepper.
  • Layer half of the sliced potatoes in a greased baking dish.
  • Spread half of the beef mixture over the potatoes, followed by half of the cheese.
  • Repeat layering with remaining potatoes, beef, and cheese.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes until golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Store leftovers in the fridge for up to 4 days, or freeze for up to 3 months. Enhance with sautéed veggies or spices.
