  • 7 cups chopped fresh broccoli florets Fresh is key, but frozen works too.
  • 2 cups chicken or vegetable broth Low-sodium options recommended.
  • 2 tsp garlic powder A must-have for depth of flavor.
  • 2 tsp dried parsley Or 1 tbsp fresh parsley.
  • 1 tsp paprika Adds color and a subtle smokiness.
  • 1 tsp onion powder For extra flavor.
  • 1 tsp red pepper flakes Optional for heat.
  • 1 tsp salt Adjust to taste.
  • 0.5 tsp black pepper Adjust to taste.
  • 8 oz cream cheese, cubed Philadelphia recommended for smooth melting.
  • 4 cups shredded mozzarella, divided High-quality brand like Polly-O preferred.

Instructions
 

Preparation

  • In a large deep skillet or Dutch oven, combine gnocchi, broccoli, broth, garlic powder, parsley, paprika, onion powder, red pepper flakes (optional), salt, and black pepper. Stir gently to mix all the flavors together.

Cooking

  • Place the skillet on the stovetop over medium heat. Bring the mixture to a gentle simmer and cover. Let it cook for about 6–8 minutes, stirring occasionally until the broccoli is bright green and tender, and the gnocchi is cooked through.
  • Reduce the heat to low. Add the cubed cream cheese and 2 cups of shredded mozzarella to the pot. Stir until everything is smooth and creamy.
  • Sprinkle the remaining mozzarella on top. Cover and let it melt for 2 minutes, or broil for a couple of minutes for a golden top.

Serving

  • Remove from heat, garnish with fresh parsley if desired, and serve warm right from the skillet.

Notes

Avoid overcooking the broccoli; it should be tender but still vibrant in color. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Consider making the dish in advance up to the point before adding cheese.
