  • 2 cups carrot cake (baked and crumbled) Homemade carrot cake is recommended for the best flavor and moisture.
  • 1/2 cup cream cheese frosting Use homemade or store-bought frosting, ensuring it's thick enough to hold cake pops together.
  • Chocolate or white candy melts Preferably Merckens or Wilton brands for best results.
  • Cake pop sticks Available at most craft stores or online.
  • Sprinkles (optional) Choose your favorite colors or shapes for decoration.

Preparation

  • In a large bowl, combine the crumbled carrot cake with the cream cheese frosting until thoroughly blended (2-3 minutes).
  • Using your hands, roll the mixture into small balls, about 1 inch in diameter, and place them on a lined baking sheet.
  • Insert a cake pop stick into each ball halfway, then arrange them back on the sheet.
  • Freeze the cake balls for at least 30 minutes until firm.
  • Melt the chocolate or candy melts as per package instructions.

Coating

  • Dip each cake pop into the melted chocolate, ensuring it's fully coated. Let excess drip off.
  • Place the pops upright in a styrofoam block or cup to cool and harden.
  • Decorate with sprinkles before chocolate sets. Let them cool until completely firm.

Notes

Store your Carrot Cake Pops in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. They can also be prepared a day in advance and dipped in chocolate just before serving.
