  • 1/2 cup Kürbiskerne, roh oder geröstet (pumpkin seeds, raw or roasted) Adds crunch and nutrition.
  • 1/4 cup Sonnenblumenkernbutter oder andere Nussbutter (sunflower seed butter or other nut butter) Binds the mix and provides creaminess.
  • 2 teaspoons Zimt (cinnamon) A warm spice that complements the carrots beautifully.
  • 1/2 teaspoon Muskatnuss (nutmeg) Adds depth of flavor.

Preparation

  • Grate the fresh carrots. Aim for thin, even strands for the best texture.
  • Combine all ingredients in a food processor and pulse until a sticky mass forms, about 1-2 minutes.
  • Roll the mixture into bite-sized balls using a tablespoon.
  • Roll each ball in shredded coconut until well coated.
  • Store the bites in an airtight container in the fridge for up to a week.

Notes

These bites are perfect for meal prep and can be frozen for up to 3 months. Try adding dark chocolate on top for a delightful treat!
