Ingredients

  • 2 sheets Puff pastry sheets Use high-quality, all-butter puff pastry for best results.

For the filling

  • 2 large Onions, thinly sliced Yellow or sweet onions work well.
  • 2 tablespoons Olive oil Extra virgin olive oil adds depth of flavor.

  • to taste Pepper Freshly ground is preferable.
  • 4 ounces Goat cheese, crumbled Creamy and tangy for best flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out thawed puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, 3-4 inches wide.
  • Transfer cut pastry onto a parchment-lined baking sheet.

Caramelizing the Onions

  • In a skillet over medium heat, add olive oil and heat until hot.
  • Add sliced onions, season with salt and pepper, and stir occasionally, cooking low and slow for about 15-20 minutes, until soft and caramelized.

Assembling the Tarts

  • Spoon a heaping tablespoon of caramelized onions onto each pastry square.
  • Top with crumbled goat cheese and sprinkle with fresh thyme if desired.

Baking

  • Bake in the preheated oven for 20-25 minutes, until pastry is puffed and golden brown.
  • Let cool slightly before serving warm.

Notes

Leftover tarts can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results. Feel free to customize with additional ingredients like sautéed mushrooms or seasonal vegetables.
