Ingredients
  

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 cup finely chopped apples (peeled and cored)
  • ½ cup caramel bits or chopped soft caramels
  • ¼ cup rolled oats (optional, for texture)

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
    Add eggs and vanilla extract, mixing until combined.
    In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    Fold in the chopped apples, caramel bits, and rolled oats (if using).
    Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
    Bake for 10-12 minutes or until the edges are lightly golden.
    Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a gooier caramel texture, use soft caramels instead of caramel bits.
  • Store cookies in an airtight container for up to 3 days.
  • Add a pinch of nutmeg for extra warmth and flavor.
