  • 2 large eggs Ensure they’re at room temperature.
  • 1 teaspoon baking powder Helps the blondies rise.
  • 1/4 teaspoon salt Enhances flavor.
  • 2 1/4 cups all-purpose flour Provides the structure.

Preparation

  • Crush the Cadbury Mini Eggs and set aside.
  • Preheat your oven to 175°C (350°F) and grease a 20x20 cm (8x8 inch) baking pan.
  • Melt the butter in a microwave-proof bowl, ensuring it’s completely liquefied without boiling.
  • In a large mixing bowl, combine melted butter and brown sugar, mixing until smooth.
  • Add eggs to the mixture and mix until creamy, about 30 seconds.
  • Incorporate baking powder and salt, then fold in the flour gradually.
  • Fold in half of the crushed Cadbury Mini Eggs carefully.
  • Spread the batter into the prepared baking pan and top with the remaining crushed Mini Eggs.

Baking

  • Bake for 25 minutes or until the edges are golden brown and a toothpick comes out clean.
  • Allow to cool for 10 minutes before slicing into squares and serving.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Can freeze for up to 2 months.
