  • 4 large Large Bell Peppers Choose vibrant colors—red, yellow, or green.
  • 2 cups Cooked Shredded Chicken Use leftover rotisserie chicken or roast chicken breasts.
  • 1/2 cup Buffalo Sauce Adjust the quantity based on your spice tolerance.
  • 1 cup Shredded Cheddar Cheese Opt for sharp cheddar for better flavor.
  • 1/2 cup Cream Cheese Bring to room temperature for easier mixing.
  • 1/4 cup Chopped Green Onions For brightness and freshness.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and carefully remove the seeds.
  • In a mixing bowl, combine the cooked chicken, buffalo sauce, cream cheese, and half of the shredded cheddar cheese. Mix well until creamy.
  • Fill each bell pepper generously with the buffalo chicken mixture.
  • Place stuffed peppers standing up in a baking dish.
  • Sprinkle the remaining cheddar cheese on top of the stuffed peppers.
  • Bake for about 25-30 minutes, until the peppers are tender and cheese is bubbly.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze unbaked peppers for up to 3 months.
