Ingredients
  

For the Sandwich

  • 2 slices Sourdough Bread Use freshly baked sourdough for optimal flavor and texture.
  • 1 each Apple (sliced) Crisp, tart apple like Granny Smith or Honeycrisp works best.
  • Brie slices Brie Cheese Aim for a creamy, high-quality Brie.
  • 1/2 handful Arugula Adds a fresh bite and balances richness.
  • 1/2 Tbsp. Butter Ensure it’s room temperature for easy spreading.

For the Honey Mustard Sauce

  • 1 Tbsp. Hot Honey Adds a touch of sweetness and heat.
  • 2 tsp. Olive Oil A good extra virgin olive oil will elevate the flavor.
  • 1 Tbsp. Dijon Mustard Adds depth of flavor.
  • 1 tsp. Apple Cider Vinegar Provides slight tanginess.
  • 1/2 C. Mayo Creamy base to hold the sauce together.
  • to taste Salt and Pepper Essential for bringing out the dish’s flavors.

Instructions
 

Honey Mustard Sauce

  • In a bowl, combine the hot honey, olive oil, Dijon mustard, apple cider vinegar, and mayo. Stir until fully combined.
  • Taste and adjust seasoning with salt and pepper as needed. Set aside.

Brie and Apple Grilled Cheese Sandwich

  • Spread the butter evenly on one side of each slice of sourdough bread.
  • Flip the bread over, and on the unbuttered side, spread a generous layer of the honey mustard sauce on both pieces of bread.
  • Place a layer of sliced Brie cheese on one slice of bread, followed by the apple slices over the honey mustard sauce. Top with the second slice of bread, buttered side facing out.
  • Place the sandwich in a skillet over medium-low heat. Cover and let it cook for 3-4 minutes until the bread turns golden brown.
  • Gently flip the sandwich and brown the other side for about 3-4 more minutes.
  • Once both sides are golden brown and the cheese is fully melted, remove the sandwich from the skillet.
  • Carefully take off one slice of bread, add a layer of arugula, and place the bread back on. Slice in half if desired, and enjoy immediately!

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. You can reheat them in a skillet to regain crispy crust.
