For the Slaw

  • 2 cups coleslaw mix pre-shredded cabbage and carrots work well for convenience
  • 1/4 cup sour cream Greek yogurt is a great substitute
  • 1 tbsp mayonnaise for creaminess
  • 1 tbsp lime juice
  • 1/2 tsp hot sauce optional, for added heat
  • 1/2 tsp honey to sweeten
  • Salt and black pepper to taste

For the Tacos

  • 8 small corn tortillas fresh are the best; you can find them at any local market
  • 1/4 cup fresh cilantro leaves for garnish
  • Lime wedges for serving

Preparation

  • In a bowl, mix the chili powder, cumin, smoked paprika, brown sugar, lime zest, olive oil, and a sprinkle of salt and black pepper. Toss the shrimp in this flavorful blend and let it marinate for at least 15 minutes.
  • While the shrimp is soaking up those spices, whisk together the sour cream, mayonnaise, lime juice, hot sauce (if using), honey, salt, and pepper in a separate bowl. Combine this with the coleslaw mix, making sure all the veggies are coated, and set it aside.

Cooking

  • Heat a dry skillet or grill over medium heat. Toast each tortilla for about 30 seconds per side until they are lightly charred and warmed up.
  • In a grill or pan over medium-high heat, cook the marinated shrimp for about 2-3 minutes per side, until they turn pink and opaque.

Assembly

  • On each warm tortilla, place a generous amount of grilled shrimp, top it with your delightful slaw, and garnish with fresh cilantro. Serve with lime wedges on the side for that zesty finish.
