Ingredients
  

For the yogurt bites

  • 1 cup Greek yogurt Use plain, full-fat Greek yogurt for best results. Can swap for low-fat or dairy-free alternatives.
  • 1/2 cup blueberries Fresh or frozen both work beautifully; do not thaw frozen.
  • 2 tbsp honey or maple syrup Adjust based on sweetness preference.
  • 1 tsp lemon juice Fresh lemon juice enhances the blueberry flavor.
  • 1/2 tsp vanilla extract Quality matters for depth of flavor.
  • 1 tsp cornstarch (optional) For thickening the compote.

Instructions
 

Preparation of Blueberry Compote

  • In a small saucepan over medium heat, combine 1/2 cup blueberries, 2 tbsp honey (or maple syrup), and 1 tsp lemon juice.
  • Let this simmer for about 5 minutes until the blueberries soften and start releasing their juices.
  • If using 1 tsp of cornstarch, dissolve it in a small amount of cold water and stir into the blueberry mixture to thicken.
  • Once thickened, remove from heat and allow it to cool completely.

Mixing the Yogurt

  • In a mixing bowl, combine 1 cup Greek yogurt and 1/2 tsp vanilla extract.
  • Stir until smooth and adjust sweetness with more honey or maple syrup if desired.

Filling the Molds

  • Carefully spoon the yogurt mixture into silicone molds or mini muffin tins, filling about three-quarters full.

Swirling in the Compote

  • Add a spoonful of the cooled blueberry compote on top of each yogurt portion.
  • Using a toothpick, swirl gently to create a marbled effect.

Freezing

  • Place the molds in the freezer for at least 3 hours, or until solid.
  • Resist the urge to sneak one before they’re fully frozen.

Serving

  • Once solid, pop the yogurt bites out of their molds and store them in an airtight container in the freezer.
  • Let them sit for 2-3 minutes at room temperature before enjoying for the best texture.

Notes

Store in an airtight container in the freezer for up to 3 months. For added flavor, consider using local honey or high-quality vanilla extract.
