Preparation

  • Blend the blueberries, maple syrup, and vanilla extract until pureed, about 30 seconds.
  • In a bowl, mix the blueberry puree with Greek yogurt until well combined.
  • Pour the mixture into popsicle molds, filling them about 3/4 full.
  • Insert sticks into each mold and freeze for at least 4 hours or overnight.
  • To serve, let the popsicles sit at room temperature for 5 minutes before running them under warm water for 15-20 seconds to loosen.

Notes

These popsicles can be stored in an airtight container in the freezer for up to 2 months. Feel free to experiment with different fruits or yogurt flavors for variety.
