  • 2 sprigs Fresh Thyme Thyme complements pork perfectly, adding a subtle sweetness.
  • 1 whole Onion, quartered Sweetens and builds flavor in the base.
  • 2 whole Carrots, chopped These provide sweetness and colorful presentation.
  • 4 whole Potatoes, chopped Classic accompaniments that soak up all the delicious juices.
  • 1 cup Chicken Broth This adds moisture during cooking and enhances the overall flavor profile.

Preparation

  • Preheat the oven to 350°F (175°C). Make sure your oven is fully preheated to get the best sear when you cook the pork.
  • Season the pork roast with salt and pepper. Generously rub both sides with seasoning, pressing to adhere.
  • In a large oven-safe skillet, heat olive oil over medium-high heat. Wait until the oil is shimmering before adding the pork.
  • Sear the pork on all sides until browned (about 4–5 minutes per side).
  • Remove the pork from the skillet and add garlic, rosemary, thyme, onion, carrots, and potatoes. Sauté for about 2-3 minutes until fragrant.
  • Place the pork on top of the vegetables in the skillet.
  • Pour the chicken broth into the skillet, ensuring the vegetables are well coated but the top of the pork remains dry and crispy.

Cooking

  • Cover the skillet with a lid or foil and bake for about 2 to 2.5 hours, or until the pork reaches an internal temperature of 145°F (63°C).
  • Let the pork rest for 10-15 minutes before slicing. Serve with the roasted vegetables.

Notes

Storage: Leftover pork can be stored in an airtight container in the refrigerator for 3-4 days. Reheat gently to retain moisture. You can season the pork roast a day before to let the flavors develop.
