  • 2 teaspoons Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika

Instructions
 

Preparation

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • Dice the onion and bell pepper, mince the garlic, and chop your cilantro.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion and bell pepper, sautéing until soft and translucent (about 5 minutes).
  • Add minced garlic, chili powder, cumin, and smoked paprika. Cook for 1-2 minutes until fragrant.
  • Add the rinsed rice to the skillet and stir to coat.
  • Pour in the vegetable broth and add a pinch of salt. Bring to a boil, then reduce heat to low, cover, and let simmer for 15-20 minutes.
  • Once the rice is fluffy, gently fold in the beans and lime juice.

Serving

  • Remove from heat. Top with fresh cilantro and serve warm.
