  • 6 pieces boneless skinless chicken thighs Opt for organic if available; they tend to have better flavor.

  • 2 Tbsp salted butter (divided) For richness. Dairy-free alternative can be used.
  • 6 cloves garlic, minced Fresh garlic provides incredible flavor.
  • 3 Tbsp honey Use high-quality local honey for best flavor.
  • 2 Tbsp low sodium soy sauce Adds savory depth without being overly salty.
  • 1/2 tsp ground thyme For a subtle herbal note. Fresh thyme works beautifully too!
  • 1/2 tsp ground ginger Adds warmth to elevate the dish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.

Cooking

  • Heat 1 Tbsp of butter in an oven-safe skillet over medium-high heat. Add the chicken thighs and sear for about 4-5 minutes on each side until golden brown.
  • Remove the chicken thighs and set them aside. In the same skillet, add the remaining 1 Tbsp of butter. Once melted, stir in the minced garlic and cook for 1 minute.
  • Whisk in the honey, soy sauce, thyme, and ginger, creating a sauce that will flavor the chicken.
  • Return the chicken thighs to the skillet and spoon the sauce over them. Bake for 20-25 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving drizzled with the pan sauce.

Notes

You can marinate the chicken in the sauce for a few hours or overnight for more flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Broil for the last 1-2 minutes for a crispier finish.
