Ingredients
  

For the Tortas

  • 1 1/2 cup green cabbage (thinly shredded) Freshness is key.
  • 1 large tomato or red bell pepper (seeded and chopped)
  • 2 large radishes (thinly sliced)
  • 1 large red onion (thinly sliced)
  • 1 can vegan refried black beans (15 oz, warmed or at room temperature) Recommended brands: Amy's Kitchen or La Preferida.
  • 1-2 avocados (pitted, peeled, and sliced) Choose ripe avocados for creaminess.
  • 1 Sriracha cashew cream or cilantro lime cashew sour cream (as spread) Customize the condiment.
  • 3 crusty or soft sandwich rolls (split) Experiment with different types of bread.
  • 1-2 limes (for squeezing)
  • to taste Hot sauce (optional) For extra heat.

Preparation

  • Start by slicing your bread and removing some of the soft bread from the inside of the top slice to create a hollow area for the filling.
  • Spread a generous amount of the warm refried black beans over the bottom half of each roll.
  • Layer the creamy avocado slices, followed by crunchy radishes, vibrant red onion, and crisp cabbage.
  • Spread your condiment of choice on the top portion of each roll and squeeze fresh lime juice over the bottom layer.
  • You can serve these immediately or wrap them up for a picnic.
  • Optional: For a deconstructed approach, combine the cabbage, tomato, radish, and red onion in a bowl with lime juice and hot sauce, then layer with beans, avocado, and your condiment.
  • For gluten-free options, use corn tortillas or gluten-free bread.

Notes

Tortas are best enjoyed fresh, but can be stored in the fridge for up to 2 days. Prepping vegetables a day ahead can save time. For extra flavor, consider roasting veggies beforehand or adding fresh herbs.
