For the Glaze

  • 1/2 cup powdered sugar For a lovely finishing touch.
  • 1-2 tbsp apple cider Adds flavor to the glaze.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream butter and sugars until light and fluffy, about 3-5 minutes.
  • Add egg, vanilla, and apple cider; mix until smooth.
  • Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  • Add dry ingredients to wet and mix until just combined.
  • Fold in diced apples gently with a spatula.
  • Scoop dough onto the prepared baking sheet using a cookie scoop or tablespoon. Leave space between each scoop.

Baking

  • Bake for 10–12 minutes until cookie edges are lightly golden.
  • Let cookies cool on the baking sheet for a few minutes. Then transfer to a wire rack to cool completely.

Glazing

  • Combine powdered sugar and apple cider until desired consistency for drizzling.
  • Drizzle with apple cider glaze before serving, ensuring cookies are cool to prevent melting.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Make ahead by shaping dough into balls and freezing, baking from frozen for extra minutes.
