  • 2 cups apple cider Look for fresh, unsweetened cider for the best flavor.
  • 1 teaspoon cinnamon Ground cinnamon adds warmth; can experiment with other spices.
  • 1 cup granulated sugar Use fine granulated sugar for even melting.
  • 6 tablespoons unsalted butter Use high-quality European-style butter for richer taste.
  • 1/3 cup heavy whipping cream Warm slightly to prevent temperature shock.
  • 1/2 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 pinch kosher salt Enhances flavors and balances sweetness.

Preparation

  • In a small saucepan over medium-high heat, add 2 cups of apple cider and 1 teaspoon of cinnamon. Cook for 18-20 minutes until reduced to about 1/4 cup.
  • In a separate medium heavy-bottomed saucepan, evenly spread 1 cup of granulated sugar and set over medium-low heat without stirring, allowing the sugar to melt on its own.
  • Once the sugar starts to melt around the edges (5-10 minutes), gently stir until it reaches a deep amber color.
  • Reduce the heat to low and carefully add 6 tablespoons of room temperature unsalted butter, stirring until fully melted.
  • Gradually stir in 1/3 cup of slightly warmed heavy whipping cream, being cautious of bubbling.
  • Stir in the reduced apple cider, 1/2 teaspoon of vanilla extract, and a pinch of kosher salt.
  • Cook on low for 5-10 minutes, stirring occasionally until smooth and well combined. Let cool.
  • Pour into a jar and serve warm or cold.

Notes

To avoid crystallization, use a clean spoon each time and avoid scraping the sides of the pan while melting sugar. Store sauce in an airtight container once cooled.
