Preparation

  • Peel and rinse the russet potatoes thoroughly under cold water.
  • Using a mandolin slicer or chef's knife, cut them into evenly sized fries – aim for about 1/4-inch thickness.
  • Place the potato fries in a bowl of ice water and soak them for 5 minutes.
  • Drain well and pat the fries completely dry with kitchen towels.

Cooking

  • In a large bowl, gently toss the dried potato fries with olive oil, ensuring each piece is uniformly coated.
  • Arrange the fries in a single layer in the air fryer basket.
  • Set the air fryer to a temperature of 375°F (190°C) and cook for 35 to 40 minutes, shaking the basket every 10 minutes.
  • After cooking, drizzle truffle oil around the edges of a large mixing bowl, add the hot fries, and gently toss them to coat evenly.
  • Sprinkle with salt, top with shredded Parmesan cheese and chopped parsley, and serve immediately.

Notes

Air Fryer cooking times may vary by model. Store leftover fries in an airtight container in the fridge for up to 2 days. They can be reheated in the air fryer at 350°F for a few minutes.
