Preparation

  • Preheat your air fryer to 375°F (190°C).
  • Slice the eggplant into ½-inch thick rounds for even cooking.
  • Pat the eggplant slices dry with paper towels to remove excess moisture.
  • Brush both sides of each eggplant slice with olive oil.
  • Sprinkle the slices with salt, pepper, Parmesan cheese, and Italian seasoning.
  • Arrange the eggplant slices in a single layer in the air fryer basket, avoiding overcrowding.

Cooking

  • Air fry for 10-12 minutes, or until the eggplant is softened and has a golden-brown crust.
  • Keep an eye on them around the 8-minute mark for a perfect finish.
  • Repeat with any remaining slices until all are cooked.

Notes

For extra crunch, consider a light dusting of breadcrumbs before air frying. Make sure to check regularly towards the end of cooking.
